- 2 Chicken Breasts or Thighs, cubed
- 1 cup Long-grain white rice
- 1 can Cream of Chicken Soup
- 2 cups Mixed frozen veggies
- 1 medium Onion, diced
- 2 cloves Garlic, minced
- 1 cup Button mushrooms, sliced
- Salt and pepper, to taste
- Olive oil, for sautéing
- 1 cup Chicken broth
Instructions
- Preheat your oven to 350°F (175°C).
- Cut chicken into cubes and season with salt and pepper.
- In a large skillet, heat a drizzle of olive oil over medium heat. Add diced onion and minced garlic, cooking until fragrant.
- Add the chicken pieces to the skillet and cook until golden brown.
- In a large bowl, combine cooked chicken, rice, cream of chicken soup, and a splash of broth. Stir in vegetables.
- Pour the mixture into a greased baking dish, ensuring an even spread.
- Cover with foil and bake for about 45 minutes. Uncover and bake for an additional 15 minutes or until bubbling and golden on top.
- Allow it to rest for a few minutes before serving.
Notes
Garnish with fresh parsley or chives and serve with a garden salad or crusty bread.
