- 1/2 cup molasses (unsulfured)
- 1 large egg
- 1/4 cup crushed juniper berries
Instructions
- In a large bowl, whisk together the flour, ginger, cinnamon, nutmeg, cloves, baking soda, and salt.
- In another bowl, cream the softened butter and brown sugar until light and fluffy.
- Beat in the molasses and egg until fully combined.
- Gradually mix the dry ingredients into the wet mixture until a smooth dough forms. Gently fold in the crushed juniper berries.
- Divide the dough into two portions, wrap them in plastic wrap, and refrigerate for at least one hour.
- Preheat your oven to 350°F (175°C).
- Roll out the chilled dough on a floured surface to about 1/4 inch thickness.
- Use cookie cutters to cut out your desired shapes, arranging them on a lined baking sheet.
- Bake for 8-10 minutes or until the edges are just set but the centers are still soft.
- Once cooled, decorate with icing, sprinkles, or melted chocolate as desired.
Notes
Test the juniper flavor by adding gradually; ensure that your butter is at room temperature for a fluffier dough.
