Instructions

  1. In a large bowl, whisk together the flour, ginger, cinnamon, nutmeg, cloves, baking soda, and salt.
  2. In another bowl, cream the softened butter and brown sugar until light and fluffy.
  3. Beat in the molasses and egg until fully combined.
  4. Gradually mix the dry ingredients into the wet mixture until a smooth dough forms. Gently fold in the crushed juniper berries.
  5. Divide the dough into two portions, wrap them in plastic wrap, and refrigerate for at least one hour.
  6. Preheat your oven to 350°F (175°C).
  7. Roll out the chilled dough on a floured surface to about 1/4 inch thickness.
  8. Use cookie cutters to cut out your desired shapes, arranging them on a lined baking sheet.
  9. Bake for 8-10 minutes or until the edges are just set but the centers are still soft.
  10. Once cooled, decorate with icing, sprinkles, or melted chocolate as desired.

Test the juniper flavor by adding gradually; ensure that your butter is at room temperature for a fluffier dough.
