Description

A comforting classic featuring tender chicken thighs marinated with zesty lemon, fresh herbs, and garlic, then baked to perfection.


Ingredients

  • 4 chicken thighs (bone-in and skin-on)
  • 2 lemons (one for juice and one for zest)
  • 4 cloves of garlic (minced)
  • 1 tablespoon of fresh rosemary (chopped) or 1 teaspoon of dried rosemary
  • 1 tablespoon of fresh thyme (chopped) or 1 teaspoon of dried thyme
  • 1/2 cup of chicken broth
  • 3 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

  1. Start by rinsing the chicken thighs and patting them dry with paper towels.
  2. In a bowl, mix the olive oil, lemon juice, minced garlic, chopped rosemary, thyme, salt, and pepper. Pour this marinade over the chicken and allow it to sit for at least 30 minutes.
  3. In a large skillet over medium-high heat, add a drizzle of olive oil. Once hot, place the chicken skin-side down. Sear until golden brown, about 5-7 minutes. Flip and cook for an additional 5 minutes.
  4. Pour in the chicken broth and add lemon zest on top. Bring to a gentle simmer.
  5. Transfer the skillet to a preheated oven at 375°F (190°C) and bake for 25-30 minutes, until the chicken reaches an internal temperature of 165°F (75°C).
  6. Remove the skillet from the oven and let the chicken rest for 5 minutes before serving with the pan juices spooned over the top.

Notes

For added richness, you can toss in some mushrooms or capers during the simmer. Always taste as you go; adjust the seasoning to match your palate!
