- 8 oz Mascarpone Cheese
- 1/2 cup Espresso Coffee (freshly brewed)
- 8 oz Dark Chocolate (at least 70% cocoa)
- 1/4 cup Cocoa Powder (for dusting)
- 2 tbsp Rum (optional)
- 1/2 cup Heavy Cream
Instructions
- Brew a strong cup of espresso and allow it to cool.
- Gently melt the dark chocolate in a double boiler or microwave, being careful not to overheat.
- In a mixing bowl, combine the mascarpone cheese, cooled espresso, and rum. Blend until smooth and creamy.
- Fold the melted chocolate into the mascarpone mixture until fully incorporated.
- Cover the bowl with plastic wrap and refrigerate for at least 120 minutes.
- Once chilled, use a small ice cream scoop or your hands to form bite-sized balls.
- Roll each truffle in cocoa powder and place them on a parchment-lined tray.
- Chill again for an additional 60 minutes before serving.
