Description
Tender turkey thighs cooked in a flavorful tomato sauce using the Instant Pot for a quick and comforting dinner.

- 4 bone-in, skin-on turkey thighs
- 2 cups tomato sauce
- 1 onion, diced
- 4 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 1 tablespoon fresh oregano, chopped
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 cup sliced mushrooms (optional)
Instructions
- Set your Instant Pot to ‘Sauté’ mode. Add olive oil and diced onion; sauté until translucent, about 3-4 minutes. Add minced garlic and sauté for an additional minute.
- Season turkey thighs with salt and pepper. Add them to the pot, skin-side down, and brown for 5-6 minutes on each side.
- Pour in the tomato sauce and scrape any browned bits off the bottom. If using, add mushrooms, fresh herbs, and red pepper flakes.
- Close the lid, seal the valve, and set Instant Pot to ‘Manual’ mode for 25 minutes of high pressure.
- Once done, turn the valve for a quick release. Carefully unlock and remove the lid.
- Let the turkey thighs rest for a few minutes before serving; the sauce may thicken upon cooling.
Notes
Serve over polenta, rice, or with bread for dipping. Don’t skip browning the meat for maximum flavor.
