Easy Instant Pot Turkey Thighs in Tomato Sauce

Description

Tender turkey thighs cooked in a flavorful tomato sauce using the Instant Pot for a quick and comforting dinner.


Ingredients

Scale
  • 4 bone-in, skin-on turkey thighs
  • 2 cups tomato sauce
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon fresh oregano, chopped
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 cup sliced mushrooms (optional)

Instructions

  1. Set your Instant Pot to ‘Sauté’ mode. Add olive oil and diced onion; sauté until translucent, about 3-4 minutes. Add minced garlic and sauté for an additional minute.
  2. Season turkey thighs with salt and pepper. Add them to the pot, skin-side down, and brown for 5-6 minutes on each side.
  3. Pour in the tomato sauce and scrape any browned bits off the bottom. If using, add mushrooms, fresh herbs, and red pepper flakes.
  4. Close the lid, seal the valve, and set Instant Pot to ‘Manual’ mode for 25 minutes of high pressure.
  5. Once done, turn the valve for a quick release. Carefully unlock and remove the lid.
  6. Let the turkey thighs rest for a few minutes before serving; the sauce may thicken upon cooling.

Notes

Serve over polenta, rice, or with bread for dipping. Don’t skip browning the meat for maximum flavor.
