- 1 whole chicken (about 4 lbs), cut into pieces
- 8 cups chicken broth
- 2 cups carrots, chopped
- 1 cup celery, chopped

- 1 onion, diced
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 cup milk
- ½ cup butter, melted
- Fresh thyme and parsley, chopped

- In a large pot, combine your chicken pieces and broth. Bring to a boil over medium-high heat, then reduce to a simmer. Cook until the chicken is tender and fully cooked, about 30-40 minutes. Remove the chicken from the pot and let it cool before shredding the meat, discarding the skin and bones.
- In the same pot, add the diced onion, carrots, and celery. Sauté for about 5-7 minutes until they soften. Stir in the shredded chicken and peas, heating everything through.
- In a bowl, mix the flour, baking powder, and salt. In another bowl, whisk the milk and melted butter. Combine the wet and dry ingredients until just mixed—the dough will be sticky.
- Drop spoonfuls of the dumpling batter over the simmering soup. Do not overcrowd. Cover the pot and simmer for 15-20 minutes without lifting the lid. This step is crucial for fluffy dumplings!
- Once the dumplings are cooked through, taste the broth and adjust seasoning with salt, pepper, and fresh herbs. Ladle into bowls and enjoy warm.
