- 1 pound ground beef or lean ground turkey
- 1 cup baby potatoes, halved or quartered
- 1 cup diced yellow onion
- 2 cloves garlic, minced
- 1 cup diced carrots
- 1 cup diced celery
- 4 cups beef broth
- 1 cup milk (or cream for an extra indulgent touch)
- 1 cup shredded cheddar cheese, plus more for garnish
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté until they begin to soften, about 5 minutes. Stir in the minced garlic and cook for another minute.
- Add the ground beef or turkey to the pot. Cook until browned, breaking it apart with a wooden spoon. Season with salt and pepper to taste.
- Stir in the halved baby potatoes, mixing well with the sautéed vegetables and meat.
- Pour in the beef broth, tomato paste, and Worcestershire sauce. Bring to a gentle boil, then reduce to a simmer. Let it cook for about 15-20 minutes or until the potatoes are tender.
- Once the potatoes are cooked, stir in the milk or cream, followed by the shredded cheese. Continue to stir until the cheese melts completely into the soup.
- Adjust seasoning if necessary, adding dried thyme for earthiness. Ladle the soup into bowls and top with additional cheese and freshly chopped parsley if desired.
Notes
For extra flavor, consider adding a splash of hot sauce or crushed red pepper. The soup holds up well in the fridge, so consider making a double batch.
