Description
A comforting and hearty white bean stew infused with Italian herbs, perfect for family gatherings.
Ingredients

- 1 can (15 oz) Cannellini beans (or Great Northern beans), drained and rinsed
- 4 cups Vegetable broth
- 1 tablespoon Fresh rosemary, chopped
- 1 tablespoon Fresh thyme, chopped
- 1 Onion, diced
- 3 cloves Garlic, minced
- 2 Carrots, diced
- 2 Celery stalks, diced
- 2 Potatoes, diced
- 2 cups Kale or spinach
- 2 tablespoons Olive oil
- 1 teaspoon Red pepper flakes (optional)
Instructions
- Prepare the ingredients. Chop your onions, garlic, carrots, celery, and any other vegetables you wish to add.
- Sauté the aromatics. In a large pot or Dutch oven, heat olive oil over medium heat. Add the onions and garlic, sautéing until translucent.
- Add the vegetables. Toss in the carrots and celery and cook for 5–7 minutes until softened.
- Incorporate the beans. If using dried beans, add them with enough vegetable broth to cover. If using canned beans, wait until step 6.
- Add herbs and spices. Sprinkle in rosemary, thyme, and red pepper flakes and stir to combine.
- Pour in broth. If using canned beans, add them now with more broth and simmer for 30-40 minutes.
- Add greens. Stir in kale or spinach about 5 minutes before serving until wilted.
- Taste and adjust seasoning with salt and pepper to suit your palate.
- Serve it hot with a drizzle of extra virgin olive oil and a squeeze of lemon.
Notes
For a complete meal, serve with crusty bread or a fresh salad.
