Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat. Add diced onions and minced garlic, sautéing until they become translucent and fragrant.
  2. Stir in the chopped ripe tomatoes (or canned), allowing them to cook until they break down, releasing their juices. Season with salt and pepper.
  3. Once the tomatoes have softened, add the Arborio rice to the pot, stirring to coat the grains in the delicious juices for about a minute.
  4. Slowly pour in the vegetable or chicken broth, stirring well. Bring the mixture to a gentle boil and then reduce the heat to a simmer.
  5. Let the soup simmer for about 20-25 minutes or until the rice is tender and has absorbed the flavors. Adjust seasoning as needed.
  6. Once cooked, stir in freshly chopped basil or your choice of herbs for that vibrant, fresh taste. Allow it to steep for a few minutes before serving.
  7. Ladle the soup into bowls and finish with a drizzle of olive oil or sprinkle of Parmesan if desired.
