Instructions
- In a large pot, heat a drizzle of olive oil over medium heat. Add diced onions and minced garlic, sautéing until they become translucent and fragrant.
- Stir in the chopped ripe tomatoes (or canned), allowing them to cook until they break down, releasing their juices. Season with salt and pepper.
- Once the tomatoes have softened, add the Arborio rice to the pot, stirring to coat the grains in the delicious juices for about a minute.
- Slowly pour in the vegetable or chicken broth, stirring well. Bring the mixture to a gentle boil and then reduce the heat to a simmer.
- Let the soup simmer for about 20-25 minutes or until the rice is tender and has absorbed the flavors. Adjust seasoning as needed.
- Once cooked, stir in freshly chopped basil or your choice of herbs for that vibrant, fresh taste. Allow it to steep for a few minutes before serving.
