  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 beaten egg (optional)

Instructions

  1. Peel and shred sweet potatoes, squeezing out excess moisture with a kitchen towel.
  2. In a skillet, heat 2 tablespoons of olive oil over medium heat, add diced onion, and cook until translucent, about 3-4 minutes.
  3. Stir in garlic and cook for an additional minute.
  4. In a bowl, combine shredded sweet potatoes, sautéed onion and garlic, beaten egg (if using), salt, and pepper.
  5. Add 1 tablespoon of olive oil to the skillet, then spoon the sweet potato mixture to form small cakes.
  6. Cook for 5-7 minutes on each side until golden brown and crispy.
  7. Transfer to a serving dish and garnish with fresh herbs.

Notes
