- 2 large sweet potatoes, peeled and shredded
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1 beaten egg (optional)
- 3 tablespoons olive oil or coconut oil
- Salt and pepper to taste
- Fresh herbs (rosemary or thyme) for garnish
Instructions
- Peel and shred sweet potatoes, squeezing out excess moisture with a kitchen towel.
- In a skillet, heat 2 tablespoons of olive oil over medium heat, add diced onion, and cook until translucent, about 3-4 minutes.
- Stir in garlic and cook for an additional minute.
- In a bowl, combine shredded sweet potatoes, sautéed onion and garlic, beaten egg (if using), salt, and pepper.
- Add 1 tablespoon of olive oil to the skillet, then spoon the sweet potato mixture to form small cakes.
- Cook for 5-7 minutes on each side until golden brown and crispy.
- Transfer to a serving dish and garnish with fresh herbs.
Notes
Use plant-based oil for a vegan version. Ensure sweet potatoes are dry for maximum crispiness.
