Description
A comforting and nourishing black bean and lentil soup, rich in flavor and packed with nutrients.
Ingredients

- 1 cup black beans, rinsed
- 1 cup green or brown lentils, rinsed
- 2 carrots, chopped
- 2 stalks of celery, chopped
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon coriander
- 1 teaspoon smoked paprika
- 6 cups vegetable broth
- Juice of 1 lime
- Fresh cilantro, chopped
- Salt and pepper, to taste
Instructions
- Rinse the black beans and lentils under cold water, discarding any debris.
- Chop the carrots, celery, and onion into small, even pieces.
- Mince the garlic.
- In a large pot, heat olive oil over medium heat.
- Add the onions and sauté until translucent, about 5 minutes.
- Add the garlic, carrots, and celery. Sauté until softened, about 4-5 minutes.
- Sprinkle in the cumin, coriander, and smoked paprika; cook for an additional minute.
- Add the black beans and lentils, followed by the vegetable broth.
- Bring to a boil, then reduce to a simmer.
- Cover and let simmer for 30 minutes, stirring occasionally.
- Stir in lime juice and cilantro; taste and adjust seasoning.
- Ladle soup into bowls, garnishing with additional cilantro and lime wedges.
Notes
Don’t rush the sautéing step to build a flavor foundation. Fresh ingredients will enhance the dish dramatically.
