Ingredients

  • 1 cup orzo
  • 1 can (28 oz) crushed tomatoes
  • 1 cup heavy cream
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Fresh basil or parsley, for garnish
  • Salt and pepper, to taste
  • Olive oil, for sautéing

Instructions

  1. Heat olive oil in a large skillet over medium heat and sauté chopped onions and minced garlic until soft.
  2. Add ground beef, breaking it apart with a spatula, and cook until browned, about 5-7 minutes. Season with salt and pepper.
  3. Stir in crushed tomatoes and bring to a gentle simmer; let bubble for about 10 minutes.
  4. Add orzo to the skillet, along with additional liquid if desired. Simmer for 10-12 minutes until orzo is tender.
  5. Lower heat and fold in heavy cream, stirring continuously until combined and heated through.
  6. Remove from heat, mix in cheese and herbs, then adjust seasoning. Serve immediately.

Notes

For added flavor, sprinkle in red pepper flakes or a splash of balsamic vinegar. Store leftovers in an airtight container for up to three days, or freeze for up to three months.
