  • 1 cup sautéed spinach
  • 1 cup sautéed mushrooms
  • 1 cup cooked chicken (optional)
  • 1 cup black beans (optional)
  • Fresh cilantro, chopped
  • 1 clove garlic, minced
  • 1 tsp ground cumin
  • Butter, for grilling

Instructions

  1. Heat a skillet over medium heat and sauté your choice of vegetables until tender.
  2. Lay a tortilla flat, sprinkle cheese over half, add sautéed fillings, and top with more cheese.
  3. Fold the sides in first, then roll from the bottom up to create a snug burrito.
  4. In the skillet, heat a bit of butter over medium-low heat and grill the burrito seam-side down until golden brown (about 3-4 minutes), then flip and repeat.
  5. Let sit for a minute before slicing in half and serve with salsa or guacamole.
