- 4 flour tortillas
- 2 cups shredded cheddar cheese (or Monterey Jack)
- 1 cup sautéed spinach
- 1 cup sautéed mushrooms
- 1 cup cooked chicken (optional)
- 1 cup black beans (optional)
- Fresh cilantro, chopped
- 1 clove garlic, minced
- 1 tsp ground cumin
- Butter, for grilling
Instructions
- Heat a skillet over medium heat and sauté your choice of vegetables until tender.
- Lay a tortilla flat, sprinkle cheese over half, add sautéed fillings, and top with more cheese.
- Fold the sides in first, then roll from the bottom up to create a snug burrito.
- In the skillet, heat a bit of butter over medium-low heat and grill the burrito seam-side down until golden brown (about 3-4 minutes), then flip and repeat.
- Let sit for a minute before slicing in half and serve with salsa or guacamole.
Notes
Butter your skillet for an extra-crisp tortilla. Don’t overstuff the burrito to avoid spillage.
