- 6 slices thick-cut bacon, diced
- 2 cups sharp cheddar cheese, grated
- 1 cup mushrooms, sliced (preferably cremini or button)
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh herbs for garnish (such as chives or parsley)
Instructions
- In a large skillet, cook the diced bacon over medium heat until crispy. Remove and drain on paper towels, keeping some bacon fat in the skillet.
- In the same skillet, add onions and garlic, sauté until translucent and fragrant. Add mushrooms and cook until golden.
- In a large pot, combine the sautéed vegetables, chicken broth, and heavy cream. Bring to a gentle simmer.
- Slowly stir in the gnocchi, whisking until they float, then add the cheddar, stirring constantly until creamy.
- Season with salt and pepper, garnish with bacon bits and fresh herbs. Serve warm.
Notes
To prevent clumping, avoid boiling when adding cheese. Let the soup sit for a few minutes before serving for flavors to meld.
