A comforting dish of slow-cooked chicken and potatoes infused with garlic and Parmesan, perfect for family gatherings and cozy evenings.

Ingredients

Scale
  • 2 lbs bone-in, skin-on chicken thighs or breasts
  • 2 lbs small potatoes (such as Yukon Gold or baby red)
  • 6 cloves fresh garlic, minced
  • 4 tablespoons unsalted butter
  • 1 cup freshly grated Parmesan cheese
  • 1 tablespoon fresh thyme or rosemary (or 1 teaspoon dried)
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Wash and quarter the potatoes. Season the chicken with salt, pepper, and half of the garlic.
  2. Sear the chicken (optional): In a skillet, sear the chicken in butter until golden brown on both sides.
  3. Layer it all: Place the potatoes in the crockpot, then add the chicken. Sprinkle with the remaining garlic, herbs, and Parmesan.
  4. Add the sauce: Melt the butter and pour it over the chicken and potatoes.
  5. Cook low and slow: Set your crockpot to low for 6-8 hours or high for 4-6 hours.
  6. Final touches: Check seasoning, stir gently to combine flavors, and add more Parmesan and herbs if desired.

Notes

For enhanced flavor, consider adding a splash of chicken broth or white wine.
