Description

Ingredients

  • Chicken thighs or breasts
  • Potatoes (Yukon Gold or red)
  • Fresh garlic (minced)
  • Grated Parmesan cheese
  • Fresh herbs (rosemary or thyme)
  • Olive oil
  • Salt and pepper
  • Optional: mushrooms or spinach

Instructions

  1. Pat chicken dry and season with salt, pepper, and minced garlic. Chop potatoes into bite-sized pieces.
  2. Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken skin-side down and sear until crispy and golden, about 7 minutes. Flip and cook for another 5 minutes.
  3. Stir in chopped potatoes, coating with drippings, and let cook for about 5 minutes.
  4. Add remaining minced garlic, fresh herbs, and sprinkle with Parmesan, mixing everything well.
  5. Preheat oven to 400°F (200°C). Transfer skillet to oven and bake for 25-30 minutes until chicken is cooked through and potatoes are tender.
  6. Before serving, sprinkle with more Parmesan and fresh herbs.
  7. Plate and enjoy with juices from the pan.
