Ingredients
- Chicken thighs or breasts
- Potatoes (Yukon Gold or red)
- Fresh garlic (minced)
- Grated Parmesan cheese
- Fresh herbs (rosemary or thyme)
- Olive oil
- Salt and pepper
- Optional: mushrooms or spinach
Instructions
- Pat chicken dry and season with salt, pepper, and minced garlic. Chop potatoes into bite-sized pieces.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken skin-side down and sear until crispy and golden, about 7 minutes. Flip and cook for another 5 minutes.
- Stir in chopped potatoes, coating with drippings, and let cook for about 5 minutes.
- Add remaining minced garlic, fresh herbs, and sprinkle with Parmesan, mixing everything well.
- Preheat oven to 400°F (200°C). Transfer skillet to oven and bake for 25-30 minutes until chicken is cooked through and potatoes are tender.
- Before serving, sprinkle with more Parmesan and fresh herbs.
- Plate and enjoy with juices from the pan.
