- 1.5 lbs boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1/4 cup olive oil
- 2 tablespoons fresh herbs (such as rosemary or thyme, chopped)
- Juice of 1 lemon
- Salt and pepper to taste
- Skewers (wooden or metal)
- 1 cup cornmeal
- 4 cups chicken or vegetable broth
- 2 tablespoons butter
- 1/2 cup Parmesan cheese, grated
- Salt to taste
Instructions
- In a bowl, combine minced garlic, olive oil, chopped herbs, lemon juice, salt, and pepper. Add cubed chicken, cover and marinate for at least 30 minutes.
- In a pot, bring the broth to a boil. Gradually whisk in cornmeal, reduce heat to low, and stir continuously until it thickens (about 5-7 minutes). Stir in butter and Parmesan cheese until creamy and season with salt.
- Preheat your grill to medium-high heat. Thread marinated chicken onto skewers with space between each piece.
- Place skewers on the grill and cook for about 10-12 minutes, turning occasionally until chicken is cooked through and has nice char marks.
- Spoon a portion of polenta onto plates and top with skewers, garnishing with fresh herbs.
Notes
For a vegan option, substitute butter with olive oil and omit the cheese, or use a plant-based alternative. Soak wooden skewers in water for about 30 minutes before grilling.
