  • 1.52 pounds sirloin or ribeye, cut into 1-inch cubes
  • 12 ounces medium pasta shells
  • 4 tablespoons unsalted butter, divided
  • 1 tablespoon olive oil
  • 46 cloves garlic, minced
  • 1 cup heavy cream
  • 1 to 1 1/2 cups finely grated parmesan cheese
  • 8 ounces cremini or baby bella mushrooms, sliced (optional)
  • 2 tablespoons chopped fresh parsley or chives
  • Salt and black pepper, to taste
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Season steak cubes generously with salt and pepper; let rest for 10 minutes.
  2. Bring a large pot of salted water to a boil; cook shells until al dente according to package directions, reserving 1 cup of pasta water before draining.
  3. Heat a large skillet over high heat; add olive oil and 2 tablespoons butter. Sear steak in a single layer for 2–3 minutes per side until caramelized; remove and tent with foil.
  4. Reduce heat to medium-high; add 1 tablespoon butter and sauté mushrooms for 3–4 minutes. Add garlic and cook for 30–45 seconds until fragrant.
  5. Lower heat to medium; add remaining butter and heavy cream. Stir and bring to a gentle simmer, whisking in parmesan until thickened; adjust with reserved pasta water as needed.
  6. Add drained shells and seared steak to the skillet, tossing gently. Finish with lemon juice, parsley, and black pepper.
  7. Serve immediately with extra parmesan and herbs.
