- 1.5–2 pounds sirloin or ribeye, cut into 1-inch cubes
- 12 ounces medium pasta shells
- 4 tablespoons unsalted butter, divided
- 1 tablespoon olive oil
- 4–6 cloves garlic, minced
- 1 cup heavy cream
- 1 to 1 1/2 cups finely grated parmesan cheese
- 8 ounces cremini or baby bella mushrooms, sliced (optional)
- 2 tablespoons chopped fresh parsley or chives
- Salt and black pepper, to taste
- 1 teaspoon lemon juice (optional)
Instructions
- Season steak cubes generously with salt and pepper; let rest for 10 minutes.
- Bring a large pot of salted water to a boil; cook shells until al dente according to package directions, reserving 1 cup of pasta water before draining.
- Heat a large skillet over high heat; add olive oil and 2 tablespoons butter. Sear steak in a single layer for 2–3 minutes per side until caramelized; remove and tent with foil.
- Reduce heat to medium-high; add 1 tablespoon butter and sauté mushrooms for 3–4 minutes. Add garlic and cook for 30–45 seconds until fragrant.
- Lower heat to medium; add remaining butter and heavy cream. Stir and bring to a gentle simmer, whisking in parmesan until thickened; adjust with reserved pasta water as needed.
- Add drained shells and seared steak to the skillet, tossing gently. Finish with lemon juice, parsley, and black pepper.
- Serve immediately with extra parmesan and herbs.
