- 400g spaghetti or linguine
- 2–3 tablespoons squid ink
- 4–5 cloves garlic, minced
- 4 tablespoons olive oil
- A handful fresh parsley, finely chopped
- Chili flakes (optional)
- Sea salt
- Black pepper, freshly cracked
- Grated Parmesan cheese, for serving (optional)
Instructions
- Boil a large pot of salted water.
- Add the spaghetti or linguine, cooking until al dente (about 8-10 minutes). Reserve about 1 cup of pasta water before draining.
- In a large skillet over medium heat, add the olive oil.
- Once hot, toss in the minced garlic and sauté until fragrant, about 1-2 minutes.
- Carefully add the squid ink to the garlic and oil, stirring until it forms a cohesive sauce. Add reserved pasta water if too thick.
- Add the drained pasta to the skillet, tossing to coat every strand with the sauce.
- Mix in the chopped parsley, chili flakes (if using), and season with salt and pepper to taste.
- Plate the pasta, garnishing with more parsley and grated Parmesan cheese if desired.

Cooking pasta in its own starchy water ensures the sauce clings beautifully to each strand.
