- 2 tablespoons olive oil
- 2 large onions, thinly sliced
- 2 cloves garlic, minced
- 4 cups beef or vegetable broth
- 1 teaspoon thyme
- Salt and pepper to taste
- 8 ounces pasta (your choice)
- 1 cup grated Gruyère cheese
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add the onions and cook until caramelized, about 20 minutes. Stir in garlic and cook for another minute.
- Add the broth and thyme, then season with salt and pepper. Bring to a boil.
- Add the pasta and cook according to package instructions until al dente.
- Serve the soup in bowls, topped with grated Gruyère cheese and garnish with fresh parsley.
Notes
For deeper flavor, cook the onions until they are very caramelized. Use homemade broth for the best taste and experiment with different types of pasta. Add a pinch of red pepper flakes for a kick.
