Description

Ingredients

  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter, chilled and cubed
  • 1 tsp salt
  • 1 tsp sugar
  • 68 tbsp ice water
  • 6 cups thinly sliced apples (Granny Smith, Honeycrisp, or a combination)
  • ¾ cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 2 tbsp all-purpose flour (to thicken)

Instructions

  1. In a mixing bowl, combine flour, salt, and sugar.
  2. Add chilled butter, mixing until crumbly.
  3. Stir in ice water one tablespoon at a time until the dough comes together.
  4. Divide into two balls, flatten into disks, and wrap in plastic. Refrigerate for at least one hour.
  5. In a large bowl, combine sliced apples, sugar, lemon juice, cinnamon, nutmeg, and flour. Allow the mixture to sit for about 30 minutes.
  6. Preheat your oven to 425°F (220°C).
  7. On a floured surface, roll out one dough disk to fit a 9-inch pie pan. Place the rolled crust in the pan and add the apple mixture carefully.
  8. Roll out the second disk and lay it over the filling. Trim and crimp the edges to seal. Cut a few slits in the top crust for steam to escape.
  9. Bake for 15 minutes at 425°F, then reduce temperature to 350°F (175°C) and bake for an additional 35–45 minutes, or until golden brown.
  10. Tip: For an extra golden finish, brush the top with an egg wash (1 beaten egg mixed with 1 tablespoon of water).
