- 2 ½ cups all-purpose flour
- 1 cup unsalted butter, chilled and cubed
- 1 tsp salt
- 1 tsp sugar
- 6–8 tbsp ice water
- 6 cups thinly sliced apples (Granny Smith, Honeycrisp, or a combination)
- ¾ cup granulated sugar
- 1 tbsp lemon juice
- 1 tsp cinnamon
- ¼ tsp nutmeg
- 2 tbsp all-purpose flour (to thicken)
Instructions
- In a mixing bowl, combine flour, salt, and sugar.
- Add chilled butter, mixing until crumbly.
- Stir in ice water one tablespoon at a time until the dough comes together.
- Divide into two balls, flatten into disks, and wrap in plastic. Refrigerate for at least one hour.
- In a large bowl, combine sliced apples, sugar, lemon juice, cinnamon, nutmeg, and flour. Allow the mixture to sit for about 30 minutes.
- Preheat your oven to 425°F (220°C).
- On a floured surface, roll out one dough disk to fit a 9-inch pie pan. Place the rolled crust in the pan and add the apple mixture carefully.
- Roll out the second disk and lay it over the filling. Trim and crimp the edges to seal. Cut a few slits in the top crust for steam to escape.
- Bake for 15 minutes at 425°F, then reduce temperature to 350°F (175°C) and bake for an additional 35–45 minutes, or until golden brown.
- Tip: For an extra golden finish, brush the top with an egg wash (1 beaten egg mixed with 1 tablespoon of water).
