Ingredients

  • 8 oz Cream Cheese (or Mascarpone)
  • 1/4 cup Fresh Herbs (Basil, Parsley)
  • 2 cloves Garlic, minced
  • 1 cup Mushrooms, chopped (Button or Cremini)
  • 1 tbsp Lemon Juice
  • Salt and Pepper to taste

Instructions

  1. In a skillet, add a tablespoon of olive oil and heat over medium. Add minced garlic and sauté until fragrant, about 1 minute.
  2. Add chopped mushrooms. Cook until golden brown and most of the moisture has evaporated, about 5-7 minutes. Season with salt and pepper.
  3. In a large bowl, mix the cream cheese (or mascarpone) until smooth. Fold in the sautéed garlic and mushrooms, herbs, and lemon juice.
  4. Taste and adjust salt, pepper, or lemon juice as desired.
  5. Transfer to a serving bowl and sprinkle with extra herbs or grated cheese on top for added flair.

Serve warm or at room temperature with vegetables, toasted baguette slices, or crackers.
