Ingredients

- 1 cup sushi rice (or short-grain rice)
- 1.25 cups water (or dashi for extra flavor)
- 1 tablespoon rice vinegar
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- 8 ounces cream cheese
- 2 tablespoons sriracha
- 1 teaspoon soy sauce
- 4 ounces fresh salmon, flaked
- 1/4 cup green onions, chopped
- Seaweed sheets (nori), optional
Instructions
- Rinse sushi rice under cold water until clear. Cook with water or dashi.
- Let rice sit for 10 minutes, then mix with vinegar, soy sauce, and sugar.
- Preheat oven to 350°F (175°C).
- Soften cream cheese, then mix with sriracha and soy sauce.
- Fold in flaked salmon and half the green onions.
- Spread cooled sushi rice in a baking dish.
- Layer the salmon mixture over the rice.
- Bake for 20-25 minutes until top is golden.
- Garnish with remaining green onions and optional nori.
- Allow to cool slightly before serving.
Notes
Pair with extra sriracha or soy sauce for added flavor.
