Ingredients

  • 1 pound Italian sausage
  • 1 cup fresh cranberries
  • 4 cups bread (ciabatta, sourdough, or crusty bread), toasted and cubed
  • 1 medium onion, diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh sage, chopped
  • 12 cups chicken or vegetable broth
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cut your bread into bite-sized cubes and toast them in the oven for 10-15 minutes until crisp.
  3. In a large skillet, heat a drizzle of olive oil over medium heat. Add the sausage and cook until browned, breaking it up as it cooks. Remove from pan and set aside.
  4. In the same skillet, add the diced onion, celery, and minced garlic. Sauté until soft, about 5 minutes.
  5. In a large mixing bowl, combine the toasted bread, cooked sausage, sautéed vegetables, cranberries, and chopped fresh herbs. Mix gently to avoid crushing the bread.
  6. Pour in enough broth to moisten the mixture without making it soggy. Combine thoroughly.
  7. Transfer the mixture to a buttered baking dish, cover with foil, and bake for 25-30 minutes. Remove the foil for the last 10 minutes to create a crispy top.

Notes

For a drier stuffing, use less broth; for a moister texture, add a bit more. Customize with nuts or fruits for added flavor.
