- 1 pound Italian sausage
- 1 cup fresh cranberries
- 4 cups bread (ciabatta, sourdough, or crusty bread), toasted and cubed
- 1 medium onion, diced
- 2 stalks celery, diced
- 2 cloves garlic, minced
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh sage, chopped
- 1–2 cups chicken or vegetable broth
- Olive oil for cooking
Instructions
- Preheat your oven to 350°F (175°C).
- Cut your bread into bite-sized cubes and toast them in the oven for 10-15 minutes until crisp.
- In a large skillet, heat a drizzle of olive oil over medium heat. Add the sausage and cook until browned, breaking it up as it cooks. Remove from pan and set aside.
- In the same skillet, add the diced onion, celery, and minced garlic. Sauté until soft, about 5 minutes.
- In a large mixing bowl, combine the toasted bread, cooked sausage, sautéed vegetables, cranberries, and chopped fresh herbs. Mix gently to avoid crushing the bread.
- Pour in enough broth to moisten the mixture without making it soggy. Combine thoroughly.
- Transfer the mixture to a buttered baking dish, cover with foil, and bake for 25-30 minutes. Remove the foil for the last 10 minutes to create a crispy top.
Notes
For a drier stuffing, use less broth; for a moister texture, add a bit more. Customize with nuts or fruits for added flavor.
