- 4 bone-in, skin-on turkey legs
- 2 cups chopped carrots
- 2 cups chopped potatoes
- 1 cup chopped onions
- 2 cups assorted seasonal vegetables (Brussels sprouts, zucchini)
- 2 tablespoons fresh rosemary
- 2 tablespoons fresh thyme
- 4 cloves minced garlic
- 4 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Chop vegetables into even pieces and toss with olive oil, salt, pepper, and half of the herbs.
- Pat turkey legs dry and rub with olive oil, minced garlic, salt, pepper, and remaining herbs.
- In a large roasting pan, arrange the turkey legs and scatter vegetables around them.
- Roast for about 1 hour and 20 minutes, or until the internal temperature reaches 165°F (75°C).
- Let the turkey legs rest for 10 minutes before serving.
Notes
Baste the turkey legs with pan juices halfway through cooking for added moisture.
