Easy Roasted Turkey Legs with Vegetables

A comforting dish featuring tender roasted turkey legs paired with flavorful seasonal vegetables, perfect for family gatherings.


Ingredients

  • 4 bone-in, skin-on turkey legs
  • 2 cups chopped carrots
  • 2 cups chopped potatoes
  • 1 cup chopped onions
  • 2 cups assorted seasonal vegetables (Brussels sprouts, zucchini)
  • 2 tablespoons fresh rosemary
  • 2 tablespoons fresh thyme
  • 4 cloves minced garlic
  • 4 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Chop vegetables into even pieces and toss with olive oil, salt, pepper, and half of the herbs.
  3. Pat turkey legs dry and rub with olive oil, minced garlic, salt, pepper, and remaining herbs.
  4. In a large roasting pan, arrange the turkey legs and scatter vegetables around them.
  5. Roast for about 1 hour and 20 minutes, or until the internal temperature reaches 165°F (75°C).
  6. Let the turkey legs rest for 10 minutes before serving.

Notes

Baste the turkey legs with pan juices halfway through cooking for added moisture.
