  • 1 cup mushrooms (shiitake or button, sliced)
  • 2 cloves ginger (freshly minced)
  • 2 cloves garlic (freshly minced)
  • 3 green onions (sliced, for garnish)
  • 2 tablespoons soy sauce (to taste)
  • 1 tablespoon sesame oil (for sautéing)
  • 1 cup fresh spinach or bok choy (roughly chopped)

Instructions

  1. In a large pot, heat sesame oil on medium heat. Add minced garlic and ginger, sauté for about 30 seconds until fragrant.
  2. Add the chicken or vegetable broth and bring to a gentle simmer.
  3. Add the potstickers directly into the simmering broth and cook according to package instructions or until they float to the top.
  4. Toss in the mushrooms and spinach or bok choy and cook for another 3-4 minutes until the mushrooms soften.
  5. Add soy sauce to taste and stir well to combine.
  6. Ladle the soup into bowls and top with sliced green onions before serving.
