- 4 cups chicken or vegetable broth (low sodium preferred)
- 1 cup mushrooms (shiitake or button, sliced)
- 2 cloves ginger (freshly minced)
- 2 cloves garlic (freshly minced)
- 3 green onions (sliced, for garnish)
- 2 tablespoons soy sauce (to taste)
- 1 tablespoon sesame oil (for sautéing)
- 1 cup fresh spinach or bok choy (roughly chopped)
Instructions
- In a large pot, heat sesame oil on medium heat. Add minced garlic and ginger, sauté for about 30 seconds until fragrant.
- Add the chicken or vegetable broth and bring to a gentle simmer.
- Add the potstickers directly into the simmering broth and cook according to package instructions or until they float to the top.
- Toss in the mushrooms and spinach or bok choy and cook for another 3-4 minutes until the mushrooms soften.
- Add soy sauce to taste and stir well to combine.
- Ladle the soup into bowls and top with sliced green onions before serving.
