Ingredients

  • 2 medium ripe pears, peeled, cored, and thinly sliced
  • 1 to 1.5 cups sharp cheddar cheese, grated
  • Fresh herbs (rosemary or thyme), finely chopped
  • 1 beaten egg mixed with a splash of water (for egg wash)
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the thawed puff pastry on a lightly floured surface and transfer it to a baking sheet lined with parchment paper.
  3. Lightly score a 1-inch border around the edges of the pastry.
  4. Toss the sliced pears with salt, pepper, and herbs in a small bowl.
  5. Sprinkle half of the cheddar cheese within the scored border, layer the pear slices on top, and finish with the remaining cheese.
  6. Brush the edges of the pastry with the egg wash.
  7. Bake for 25-30 minutes or until the pastry is golden and puffed, and the cheese is bubbling.
  8. Let cool slightly before slicing and serving.

Notes

Choose firm, ripe pears for best results. Avoid overloading the tart to prevent sogginess.
