- 1 pound ground beef
- ¾ cup breadcrumbs
- 1 large egg
- ½ cup finely chopped mushrooms
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon fresh thyme
- 1 sheet puff pastry
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, melt a tablespoon of butter over medium heat. Add the onions, garlic, and mushrooms. Sauté until soft, about 5-7 minutes. Allow to cool slightly.
- In a bowl, combine the ground beef, sautéed vegetables, breadcrumbs, egg, parsley, thyme, salt, and pepper. Mix gently until just combined.
- On a lightly floured surface, roll out the puff pastry and place the meat mixture in the center. Fold the pastry over the top and seal the edges.
- Place the sealed meatloaf on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until golden brown. Ensure the internal temperature reaches 160°F (70°C).
- Let it rest for about 10 minutes before slicing.
Notes
Brush the pastry with an egg wash before baking for a glossy finish. Consider adding vegetables for extra nutrition.
