- 1 cup turkey drippings
- 1/4 cup unsalted butter (or olive oil)
- 1/4 cup all-purpose flour (or cornstarch)
- 2 cups chicken or turkey broth (or vegetable stock)
- 1/2 cup finely chopped onion
- 2 cloves garlic, minced (or dried garlic)
- 1 tsp fresh thyme (or dried thyme)
- 1 tsp fresh sage (or dried sage)
- 1 tsp fresh rosemary (or dried rosemary)
- Salt and black pepper to taste
Instructions
- Pour the turkey drippings into a measuring cup.
- Allow the drippings to settle; skim off the fat that rises to the top.
- In a saucepan, melt 1/4 cup of butter over medium heat. Add finely chopped onion and cook until golden and translucent, about 3-4 minutes.
- Whisk in 1/4 cup of flour to the onions, stirring constantly for about 2 minutes until smooth and bubbly.
- Gradually whisk in 2 cups of broth while continuing to stir to avoid lumps.
- Add the reserved turkey drippings (minus the fat) into the mixture and keep stirring.
- Add minced garlic, fresh herbs, salt, and black pepper to taste.
- Allow the gravy to simmer gently for about 5-10 minutes until it thickens to your desired consistency.
- If the gravy is too thick, whisk in more broth; if too thin, simmer a bit longer to thicken.
Notes
For a smoother gravy, strain through a fine-mesh sieve to remove onion and herb remnants. Always taste and adjust salt and herbs to suit your preference.
