Ingredients

  • 1 cup turkey drippings
  • 1/4 cup unsalted butter (or olive oil)
  • 1/4 cup all-purpose flour (or cornstarch)
  • 2 cups chicken or turkey broth (or vegetable stock)
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced (or dried garlic)
  • 1 tsp fresh thyme (or dried thyme)
  • 1 tsp fresh sage (or dried sage)
  • 1 tsp fresh rosemary (or dried rosemary)
  • Salt and black pepper to taste

Instructions

  1. Pour the turkey drippings into a measuring cup.
  2. Allow the drippings to settle; skim off the fat that rises to the top.
  3. In a saucepan, melt 1/4 cup of butter over medium heat. Add finely chopped onion and cook until golden and translucent, about 3-4 minutes.
  4. Whisk in 1/4 cup of flour to the onions, stirring constantly for about 2 minutes until smooth and bubbly.
  5. Gradually whisk in 2 cups of broth while continuing to stir to avoid lumps.
  6. Add the reserved turkey drippings (minus the fat) into the mixture and keep stirring.
  7. Add minced garlic, fresh herbs, salt, and black pepper to taste.
  8. Allow the gravy to simmer gently for about 5-10 minutes until it thickens to your desired consistency.
  9. If the gravy is too thick, whisk in more broth; if too thin, simmer a bit longer to thicken.

Notes

For a smoother gravy, strain through a fine-mesh sieve to remove onion and herb remnants. Always taste and adjust salt and herbs to suit your preference.
