Ingredients

- Fresh broccoli, cut into bite-sized florets
- 2 cloves garlic, minced
- 2 tablespoons extra virgin olive oil
- Juice and zest of 1 lemon
- 1/4 cup grated Parmesan cheese (or nutritional yeast for vegan option)
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to a boil, then add pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
- In a large skillet, heat olive oil over medium heat; add minced garlic and sauté for about 1 minute until fragrant.
- Add broccoli florets, season with salt and pepper, and sauté for 5-7 minutes until tender but vibrant.
- Add drained pasta to the skillet, pour in reserved pasta water, and mix gently until the pasta is coated.
- Squeeze in lemon juice, add lemon zest, Parmesan cheese, and red pepper flakes if using; toss well and adjust seasoning before serving.
Notes
For added crunch, top with toasted breadcrumbs before serving. Use tongs for even distribution of flavors when mixing.
