Ingredients

  • Fresh broccoli, cut into bite-sized florets
  • 2 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • Juice and zest of 1 lemon
  • 1/4 cup grated Parmesan cheese (or nutritional yeast for vegan option)
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil, then add pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat; add minced garlic and sauté for about 1 minute until fragrant.
  3. Add broccoli florets, season with salt and pepper, and sauté for 5-7 minutes until tender but vibrant.
  4. Add drained pasta to the skillet, pour in reserved pasta water, and mix gently until the pasta is coated.
  5. Squeeze in lemon juice, add lemon zest, Parmesan cheese, and red pepper flakes if using; toss well and adjust seasoning before serving.

Notes

For added crunch, top with toasted breadcrumbs before serving. Use tongs for even distribution of flavors when mixing.
