A warm, comforting potato soup with creamy cheese and crispy bacon, perfect for chilly days.
Ingredients

- 4 cups Yukon Gold or Russet potatoes, chopped
- 2 cups cheddar cheese, shredded
- 6 slices bacon, crisped
- 1 onion, diced
- 3 garlic cloves, minced
- 4 cups chicken or vegetable broth
- 1 cup cream or milk
- Salt and pepper, to taste
- Chives or green onions, for garnish
Instructions
- Prepare the ingredients: Wash and peel the potatoes. Dice them uniformly. Chop the onions and mince the garlic.
- Cook the bacon: In a skillet over medium heat, cook the bacon until crispy. Reserve some for garnish and add the rest to the crock pot.
- Combine in the crock pot: Add diced potatoes, onion, garlic, chicken or vegetable broth, salt, and pepper into the crock pot. Stir well.
- Slow cook: Cover and cook on low for 6-8 hours or high for 4 hours until the potatoes are tender.
- Add the creaminess: About 30 minutes before serving, stir in shredded cheese and milk or cream until melted.
- Garnish and serve: Before serving, sprinkle with reserved bacon and fresh chives or green onions.
Notes
For a thicker soup, mash some potatoes against the side of the crock pot. You can also sauté onions and garlic for deeper flavor before cooking.
