- 4 boneless, skinless chicken thighs
- 1 can (13.5 oz) full-fat coconut milk
- 2 tablespoons cooking oil
- ½ cup mayonnaise
- ¼ cup sweet chili sauce
- 1–2 tablespoons sriracha (to taste)
- Salt and pepper to taste
- Fresh herbs (cilantro, basil, or green onions) for garnish
Instructions
- Pat your chicken dry; season both sides with salt and pepper.
- In a skillet, heat 2 tablespoons of oil over medium-high heat. Sear the chicken thighs for 5–7 minutes on each side until golden brown. Remove and set aside.
- In the same skillet, lower the heat and pour in the coconut milk. Scrape up any brown bits left in the pan while stirring to infuse flavor.
- Add the chicken back to the skillet, allowing it to simmer in the creamy sauce for about 10–15 minutes, or until fully cooked through.
- While the chicken simmers, mix the mayonnaise, sweet chili sauce, and sriracha in a bowl. Adjust spice levels to your preference.
- Plate the chicken, drizzle with Bang Bang sauce, and garnish with fresh herbs. Serve with rice or salad!
Notes
For a lighter meal, substitute chicken thighs with chicken breasts or use light coconut milk. Allow the Bang Bang sauce to rest for at least five minutes before serving for enhanced flavors.
