A delightful union of banana bread and cinnamon rolls, creating a fluffy and moist loaf with sweet cinnamon swirls.


Ingredients

  • 34 ripe bananas
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 2 eggs
  • ½ cup unsalted butter (melted and cooled)
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • Optional: Cream cheese or confectioners’ sugar (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5 inch loaf pan.
  3. Mash the bananas in a large bowl until smooth.
  4. Mix in the eggs, melted butter, and granulated sugar until well combined.
  5. In a separate bowl, whisk together the flour, baking soda, baking powder, and ground cinnamon. Fold into the wet ingredients until just combined.
  6. In a small bowl, combine the brown sugar and ground cinnamon for the swirl.
  7. Pour half the batter into the loaf pan, sprinkle half of the cinnamon mixture, and swirl gently. Repeat with remaining batter and cinnamon mixture.
  8. Bake for 55-65 minutes, or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then drizzle with optional icing.

Notes

For a crispy crust, place a bowl of water in the oven while baking.
