- 3–4 ripe bananas
- 2 cups all-purpose flour
- 1 cup granulated sugar
- ½ cup brown sugar
- 2 eggs
- ½ cup unsalted butter (melted and cooled)
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- 1 teaspoon ground cinnamon
- Optional: Cream cheese or confectioners’ sugar (for icing)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×5 inch loaf pan.
- Mash the bananas in a large bowl until smooth.
- Mix in the eggs, melted butter, and granulated sugar until well combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and ground cinnamon. Fold into the wet ingredients until just combined.
- In a small bowl, combine the brown sugar and ground cinnamon for the swirl.
- Pour half the batter into the loaf pan, sprinkle half of the cinnamon mixture, and swirl gently. Repeat with remaining batter and cinnamon mixture.
- Bake for 55-65 minutes, or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then drizzle with optional icing.
Notes
For a crispy crust, place a bowl of water in the oven while baking.
