- 4–6 green chiles, roasted and sliced
- 2 cups shredded Monterey Jack cheese
- 2 cups shredded cheddar cheese
- 8 eggs
- 1 cup sour cream
- 8 corn tortillas
- Fresh cilantro, for garnish
- Salt and pepper to taste
- 1 tsp cumin (optional)
- 1 tsp paprika (optional)
Instructions
- Prepare Your Chiles: Roast the green chiles over an open flame or under the broiler until charred. Peel and seed them, then slice.
- Cheese Blend: In a bowl, combine shredded Monterey Jack and cheddar cheese, reserving 1 cup for topping.
- Egg Mixture: Whisk together the eggs and sour cream in a bowl. Season with salt, pepper, and additional spices.
- Layering: In a greased baking dish, layer corn tortillas, chiles, and cheese blend. Repeat the layers, finishing with the cheese.
- Bake: Preheat oven to 350°F (175°C) and bake for 30-35 minutes until set and golden.
- Serve: Allow to rest for a few minutes, slice, and garnish with fresh cilantro.
Notes
For a spicier casserole, add jalapeños or olives. Let it rest before serving for the best results.
