Description

Ingredients

  • 46 green chiles, roasted and sliced
  • 2 cups shredded Monterey Jack cheese
  • 2 cups shredded cheddar cheese
  • 8 eggs
  • 1 cup sour cream
  • 8 corn tortillas
  • Fresh cilantro, for garnish
  • Salt and pepper to taste
  • 1 tsp cumin (optional)
  • 1 tsp paprika (optional)

Instructions

  1. Prepare Your Chiles: Roast the green chiles over an open flame or under the broiler until charred. Peel and seed them, then slice.
  2. Cheese Blend: In a bowl, combine shredded Monterey Jack and cheddar cheese, reserving 1 cup for topping.
  3. Egg Mixture: Whisk together the eggs and sour cream in a bowl. Season with salt, pepper, and additional spices.
  4. Layering: In a greased baking dish, layer corn tortillas, chiles, and cheese blend. Repeat the layers, finishing with the cheese.
  5. Bake: Preheat oven to 350°F (175°C) and bake for 30-35 minutes until set and golden.
  6. Serve: Allow to rest for a few minutes, slice, and garnish with fresh cilantro.

Notes

For a spicier casserole, add jalapeños or olives. Let it rest before serving for the best results.
