Description

A comforting, fluffy oven-baked pancake filled with savory beef, crispy bacon, and gooey cheddar cheese.


Ingredients

  • 4 large eggs
  • 1 cup whole milk
  • 1 cup all-purpose flour
  • a pinch of salt
  • 3 tablespoons unsalted butter
  • 1 cup ground beef
  • 34 slices bacon, chopped
  • 1 cup cheddar cheese, shredded
  • 1 small onion, diced
  • Fresh or dried herbs (thyme or chives)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a skillet over medium heat, cook the bacon until crispy, about 5 minutes. Remove and set aside.
  3. In the same skillet, sauté the diced onion until translucent, then add the ground beef and cook through. Season with salt and pepper, and reintroduce the bacon.
  4. In a bowl, whisk together the eggs, milk, flour, and a pinch of salt until smooth. Let it rest for 5 minutes.
  5. Place the cast-iron skillet in the preheated oven with the butter. Let it melt until bubbling and slightly browned, about 5-7 minutes.
  6. Pour the batter into the hot skillet, followed by the beef, bacon, and onion mixture. Sprinkle cheddar on top and bake for 20-25 minutes until puffed and golden.
  7. Allow to cool slightly before slicing and serve warm, garnished with fresh herbs if desired.

Notes

Ensure to use a hot skillet and do not open the oven door while it bakes for the best results.
