- 4 large eggs
- 1 cup whole milk
- 1 cup all-purpose flour
- a pinch of salt
- 3 tablespoons unsalted butter
- 1 cup ground beef
- 3–4 slices bacon, chopped
- 1 cup cheddar cheese, shredded
- 1 small onion, diced
- Fresh or dried herbs (thyme or chives)
Instructions
- Preheat the oven to 425°F (220°C).
- In a skillet over medium heat, cook the bacon until crispy, about 5 minutes. Remove and set aside.
- In the same skillet, sauté the diced onion until translucent, then add the ground beef and cook through. Season with salt and pepper, and reintroduce the bacon.
- In a bowl, whisk together the eggs, milk, flour, and a pinch of salt until smooth. Let it rest for 5 minutes.
- Place the cast-iron skillet in the preheated oven with the butter. Let it melt until bubbling and slightly browned, about 5-7 minutes.
- Pour the batter into the hot skillet, followed by the beef, bacon, and onion mixture. Sprinkle cheddar on top and bake for 20-25 minutes until puffed and golden.
- Allow to cool slightly before slicing and serve warm, garnished with fresh herbs if desired.
Notes
Ensure to use a hot skillet and do not open the oven door while it bakes for the best results.
