Description
A comforting and creamy potato soup enriched with broth and fresh herbs, perfect for cozy gatherings.
Ingredients
Scale
- 4 Yukon Gold or Russet potatoes, peeled and chopped
- 1 sweet yellow onion, diced
- 2 cloves fresh garlic, minced
- 4 cups vegetable or chicken broth, low-sodium
- 2 tablespoons butter or olive oil
- Fresh thyme or rosemary, to taste
- Salt and pepper, to taste
- 1/2 cup cream (optional)
Instructions
- Prep the ingredients: Peel and chop the potatoes into uniform cubes, dice the onion, and mince the garlic.
- Sauté: In a large pot, melt butter or heat olive oil over medium heat, add diced onion and cook until translucent, about 5 minutes. Stir in minced garlic and cook for an additional minute.
- Add potatoes: Toss in the chopped potatoes and sauté for another 3 minutes.
- Pour in the broth: Add the broth, bring to a boil, then reduce to a simmer. Cook for about 20 minutes until potatoes are fork-tender.
- Blend for creaminess: Use an immersion blender to puree the soup or mash some of the potatoes for a chunkier texture.
- Season: Stir in herbs, salt, and pepper; adjust seasoning as needed. Add a splash of cream if desired.
- Serve: Ladle into bowls and garnish with fresh herbs or croutons.
- Enjoy: Share the soup with family and friends!
Notes
Start with high-quality broth and allow onions to caramelize for deeper flavor. Adjust texture to your preference.
