- 1 pound rigatoni pasta
- 1 pound Italian sausage (sweet or spicy)
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese
- 1 cup mushrooms, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 tablespoons fresh herbs (basil, parsley)
- Salt and pepper to taste
Instructions
- Gather all your ingredients, and preheat the oven to 375°F (190°C).
- Boil rigatoni in salted water until al dente, about 8-10 minutes. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add crumbled sausage and cook until browned. Toss in minced garlic and mushrooms, sautéing until tender.
- In a large bowl, mix the cooked rigatoni, sausage mixture, marinara sauce, half of the mozzarella, and chopped herbs until well coated.
- Transfer the rigatoni mixture to a greased baking dish. Top with the remaining mozzarella and sprinkle with parmesan if desired.
- Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for another 10-15 minutes until golden and bubbly.
- Allow the dish to cool slightly before serving and garnish with fresh herbs.
Notes
For variations, swap rigatoni with penne or ziti. Use turkey sausage for a lighter option. Customize with your favorite veggies.
