Delicious and comforting baked chicken taquitos filled with savory shredded chicken, cheese, and spices, perfect for any occasion.


Ingredients

  • 2 cups cooked shredded chicken (rotisserie or leftover)
  • 1 cup shredded cheese (cheddar and Monterey Jack)
  • 8 small flour or corn tortillas
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tbsp olive oil (for brushing)
  • Optional: bell peppers, onions, or sautéed mushrooms

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine cooked chicken, cheese, cumin, smoked paprika, garlic powder, and onion powder. Add optional vegetables.
  3. Spoon the filling down the center of a tortilla, roll tightly, and place seam side down on a baking sheet lined with parchment paper.
  4. Lightly brush each taquito with olive oil.
  5. Bake for 15-20 minutes or until crispy and golden.
  6. Serve warm with your favorite dips and toppings.

Notes

For a vegetarian version, replace chicken with black beans. Warm corn tortillas in a skillet to make them pliable.
