- 2 cups cooked shredded chicken (rotisserie or leftover)
- 1 cup shredded cheese (cheddar and Monterey Jack)
- 8 small flour or corn tortillas
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tbsp olive oil (for brushing)
- Optional: bell peppers, onions, or sautéed mushrooms
Instructions
- Preheat your oven to 425°F (220°C).
- In a mixing bowl, combine cooked chicken, cheese, cumin, smoked paprika, garlic powder, and onion powder. Add optional vegetables.
- Spoon the filling down the center of a tortilla, roll tightly, and place seam side down on a baking sheet lined with parchment paper.
- Lightly brush each taquito with olive oil.
- Bake for 15-20 minutes or until crispy and golden.
- Serve warm with your favorite dips and toppings.
Notes
For a vegetarian version, replace chicken with black beans. Warm corn tortillas in a skillet to make them pliable.
