Ingredients

  • 2 medium Granny Smith or Honeycrisp apples, peeled, cored, and chopped
  • 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¾ cup milk (whole or milk alternative)
  • ½ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ tsp salt

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Peel, core, and chop the apples into small pieces. Toss with cinnamon and brown sugar.
  3. In a bowl, mix flour, baking powder, salt, cinnamon, and nutmeg. In another bowl, whisk together brown sugar, milk, eggs, and vanilla.
  4. Gradually combine the dry ingredients with the wet mixture until just combined.
  5. Fold in the seasoned apple pieces into the batter.
  6. Scoop generous rounds of batter onto the prepared baking sheet, spacing them apart.
  7. Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
  8. Allow to cool slightly before dusting with powdered sugar and serving warm.
