Ingredients

  • 2 cups fresh cranberries (or dried, reduced sugar)
  • 2 large apples, cored and quartered (Granny Smith or Honeycrisp)
  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon honey or maple syrup
  • Salt and pepper to taste
  • Fresh herbs (rosemary and thyme) for flavor

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse and pat the chicken dry, season the cavity with salt and pepper.
  3. Mix olive oil, minced garlic, and honey in a small bowl and rub over the chicken.
  4. Spread onion, apple quarters, and cranberries around the chicken in a roasting pan, tuck in fresh herbs.
  5. Roast in the oven for approximately 75 minutes or until the internal temperature reaches 165°F (75°C), basting halfway through.
  6. Let the chicken rest for 10-15 minutes before serving.
  7. Serve warm with the cranberries and apples on a platter.

Notes

For extra crispy skin, leave the chicken uncovered in the refrigerator for a few hours before cooking.
