Ingredients

- 1 whole chicken (about 4–5 pounds)
- 2 cups fresh cranberries (or dried, reduced sugar)
- 2 large apples, cored and quartered (Granny Smith or Honeycrisp)
- 1 onion, quartered
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon honey or maple syrup
- Salt and pepper to taste
- Fresh herbs (rosemary and thyme) for flavor
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse and pat the chicken dry, season the cavity with salt and pepper.
- Mix olive oil, minced garlic, and honey in a small bowl and rub over the chicken.
- Spread onion, apple quarters, and cranberries around the chicken in a roasting pan, tuck in fresh herbs.
- Roast in the oven for approximately 75 minutes or until the internal temperature reaches 165°F (75°C), basting halfway through.
- Let the chicken rest for 10-15 minutes before serving.
- Serve warm with the cranberries and apples on a platter.
Notes
For extra crispy skin, leave the chicken uncovered in the refrigerator for a few hours before cooking.
