- 2 tablespoons butter
- 1 pound beef sausage, sliced
- 1 cup orzo
- 4–5 cloves garlic, minced
- 1 onion, finely chopped
- 4 cups chicken or beef broth
- Salt and pepper to taste
- Fresh parsley or thyme for garnish
Instructions
- Heat 2 tablespoons of butter in a large pot over medium heat.
- Add sliced beef sausage and cook until browned, about 5–7 minutes.
- Add finely chopped onion and minced garlic, cooking until softened and aromatic.
- Stir in 1 cup of orzo, coating it in the buttery mixture for 1–2 minutes.
- Add 4 cups of broth and bring to a gentle boil; season with salt and pepper.
- Reduce heat to low, cover, and simmer for 10–12 minutes until orzo is tender and liquid is mostly absorbed.
- Remove from heat, stir in 2 tablespoons of butter and freshly chopped herbs.
- Serve hot, straight from the pot.
Notes
For best results, use freshly minced garlic and don’t skip toasting the orzo.
