Description

A comforting and easy one-pot meal combining garlic, beef sausage, and orzo in a buttery sauce, perfect for family gatherings.


Ingredients

  • 2 tablespoons butter
  • 1 pound beef sausage, sliced
  • 1 cup orzo
  • 45 cloves garlic, minced
  • 1 onion, finely chopped
  • 4 cups chicken or beef broth
  • Salt and pepper to taste
  • Fresh parsley or thyme for garnish

Instructions

  1. Heat 2 tablespoons of butter in a large pot over medium heat.
  2. Add sliced beef sausage and cook until browned, about 5–7 minutes.
  3. Add finely chopped onion and minced garlic, cooking until softened and aromatic.
  4. Stir in 1 cup of orzo, coating it in the buttery mixture for 1–2 minutes.
  5. Add 4 cups of broth and bring to a gentle boil; season with salt and pepper.
  6. Reduce heat to low, cover, and simmer for 10–12 minutes until orzo is tender and liquid is mostly absorbed.
  7. Remove from heat, stir in 2 tablespoons of butter and freshly chopped herbs.
  8. Serve hot, straight from the pot.

Notes

For best results, use freshly minced garlic and don’t skip toasting the orzo.
