Ingredients

  • ΒΌ cup rice vinegar
  • Nori sheets (seaweed)
  • Shrimp tempura (or your choice of protein)
  • 1 avocado (sliced)
  • 1 cucumber (julienned)
  • Spicy mayo (a mixture of mayonnaise and sriracha)
  • Eel sauce (can be replaced with soy sauce)
  • Sesame seeds (optional, for garnish)

Instructions

  1. Rinse sushi rice under cold water until clear. Cook according to rice cooker instructions or on the stove. Fluff and let cool.
  2. Mix rice vinegar, sugar, and salt in a small bowl; stir into cooled rice.
  3. Prepare fillings: Make or purchase shrimp tempura, julienne cucumber, and slice avocado.
  4. Lay nori on a bamboo mat; press rice onto nori, leaving a 1-inch border. Add shrimp tempura, cucumber, and avocado in the center.
  5. Roll sushi using the mat, sealing the edge with water. Let sit to hold shape.
  6. Slice into pieces and garnish with sesame seeds. Serve with soy sauce, pickled ginger, and wasabi.
