Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 4 cups romaine lettuce, chopped
  • 2 medium tomatoes, diced
  • 1 avocado, sliced or cubed
  • 2 cups Doritos, crushed
  • 1 cup shredded cheddar cheese
  • ¼ to ½ cup taco dressing or ranch dressing
  • 1 can kidney beans (optional)
  • Green onions, chopped (for garnish)

Instructions

  1. In a skillet over medium heat, sauté ground beef until brown. Add taco seasoning and cook according to package directions. Let cool slightly.
  2. Chop romaine lettuce, dice tomatoes, and slice avocado. Chop green onions.
  3. In a large mixing bowl, layer romaine as the foundation. Add ground beef, followed by tomatoes and kidney beans if using. Top with cheddar cheese and avocado.
  4. Drizzle dressing over the salad and gently toss to combine.
  5. Right before serving, add crushed Doritos to the top. Serve immediately.

Notes

For a lighter option, substitute ground turkey or chicken. Store leftovers in the fridge without Doritos.
