- 2 lbs boneless, skinless chicken (thighs or breasts)
- 4 cups stale or day-old rustic bread, torn
- 1 cup chicken broth
- 1 cup diced onions
- 1/2 cup diced celery
- 1 tsp garlic powder
- 1 tsp ground sage
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 tbsp olive oil for sautéing
- Fresh herbs for garnish
Instructions
- Preheat oven to 350°F (175°C).
- Season chicken with salt, pepper, garlic powder, and herbs. Sauté in a skillet until golden brown.
- In the same skillet, sauté diced onions and celery until soft.
- In a large bowl, mix sautéed vegetables with torn bread and chicken broth until the bread absorbs the broth.
- Layer the cooked chicken in a greased casserole dish, then spoon the stuffing mixture over the top. Cover with aluminum foil.
- Bake for 25-30 minutes. Remove foil during the last 10 minutes to brown the top.
- Let it rest for a few minutes, garnish with fresh herbs, and serve warm.
Notes
For a moister stuffing, adjust the amount of broth used. Allow the casserole to rest before serving for the best texture.
