Ingredients

  • 2 lbs boneless, skinless chicken (thighs or breasts)
  • 4 cups stale or day-old rustic bread, torn
  • 1 cup chicken broth
  • 1 cup diced onions
  • 1/2 cup diced celery
  • 1 tsp garlic powder
  • 1 tsp ground sage
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 tbsp olive oil for sautéing
  • Fresh herbs for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Season chicken with salt, pepper, garlic powder, and herbs. Sauté in a skillet until golden brown.
  3. In the same skillet, sauté diced onions and celery until soft.
  4. In a large bowl, mix sautéed vegetables with torn bread and chicken broth until the bread absorbs the broth.
  5. Layer the cooked chicken in a greased casserole dish, then spoon the stuffing mixture over the top. Cover with aluminum foil.
  6. Bake for 25-30 minutes. Remove foil during the last 10 minutes to brown the top.
  7. Let it rest for a few minutes, garnish with fresh herbs, and serve warm.

Notes

For a moister stuffing, adjust the amount of broth used. Allow the casserole to rest before serving for the best texture.
