Ingredients

  • 2 medium Sweet Potatoes, peeled and cubed
  • 1 large head Broccoli, cut into florets
  • 2 tablespoons Olive Oil
  • 3 cloves Garlic, minced
  • Salt and Pepper, to taste
  • Optional: Fresh herbs, Balsamic reduction, or crumbled feta cheese

Instructions

  1. Preheat the Oven to 425°F (220°C).
  2. Prepare the Vegetables: Peel and cube the sweet potatoes, and cut the broccoli into florets.
  3. Season: In a large bowl, combine sweet potatoes and broccoli, drizzle with olive oil, add garlic, salt, and pepper, and toss until coated.
  4. Roast: Spread vegetables on a baking sheet and roast for about 25-30 minutes, stirring halfway through.
  5. Finishing Touches: Remove from oven when sweet potatoes are tender and broccoli has crispy edges. Add optional ingredients if desired.
  6. Serve: Plate the dish immediately or let cool slightly before serving.
