- 2 medium Sweet Potatoes, peeled and cubed
- 1 large head Broccoli, cut into florets
- 2 tablespoons Olive Oil
- 3 cloves Garlic, minced
- Salt and Pepper, to taste
- Optional: Fresh herbs, Balsamic reduction, or crumbled feta cheese
Instructions
- Preheat the Oven to 425°F (220°C).
- Prepare the Vegetables: Peel and cube the sweet potatoes, and cut the broccoli into florets.
- Season: In a large bowl, combine sweet potatoes and broccoli, drizzle with olive oil, add garlic, salt, and pepper, and toss until coated.
- Roast: Spread vegetables on a baking sheet and roast for about 25-30 minutes, stirring halfway through.
- Finishing Touches: Remove from oven when sweet potatoes are tender and broccoli has crispy edges. Add optional ingredients if desired.
- Serve: Plate the dish immediately or let cool slightly before serving.

Don’t crowd the pan while roasting and ensure even cutting for uniform cooking.
