- 1 lb boneless, skinless chicken breasts or thighs
- 15 oz tortellini (fresh or frozen)
- 4 cups chicken broth
- 1 cup heavy cream (or coconut milk/half-and-half)
- 1 onion, chopped
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 tsp fresh rosemary, chopped
- 1 tsp fresh thyme, chopped
- Salt and black pepper to taste
- 2 tbsp olive oil
Instructions
- In a large skillet, sauté chopped onions and minced garlic in olive oil over medium heat until fragrant and translucent.
- In your CrockPot, add the sautéed vegetables, diced chicken, and tortellini. Pour in the chicken broth, then stir in the herbs, salt, and pepper.
- Cover the CrockPot and cook on low for 6-8 hours or on high for 3-4 hours.
- Once the chicken is cooked through, stir in heavy cream for the final half-hour of cooking.
- Ladle the soup into bowls, garnishing with additional herbs if desired.
Notes
For a thicker broth, consider adding cornstarch mixed with water at the end of the cooking time. Experiment with herbs like oregano or parsley for added flavor.
