- 4 boneless, skinless chicken breasts or thighs
- 1 can cream of chicken soup
- 1 onion, diced
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp thyme
- 1 tsp rosemary
Instructions
- Prepare the Ingredients: Dice the onions and mushrooms. Mince the garlic. Season the chicken generously with salt and pepper.
- Sauté the Vegetables: In a skillet over medium heat, add olive oil and sauté the onions and mushrooms until tender, about 5-7 minutes.
- Combine in the Crockpot: Place the sautéed veggies at the bottom of the crockpot and lay the seasoned chicken on top.
- Mix the Gravy: In a bowl, mix cream of chicken soup, chicken broth, and minced garlic until smooth. Pour over chicken and sprinkle with thyme and rosemary.
- Cook: Cover and cook on high for 4 hours or low for 6-8 hours, until chicken is tender and shreds easily.
- Thicken the Gravy: If needed, remove the lid for the last 30 minutes of cooking to thicken the gravy.
- Serve and Enjoy: Shred the chicken in the crockpot and mix with the gravy. Serve hot over rice, mashed potatoes, or noodles.
