- 1 lb boneless, skinless chicken breast
- 1 cup freshly grated Parmesan cheese
- 8 oz cremini or button mushrooms, sliced
- 4 cloves fresh garlic, minced
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 1/4 cup fresh basil, chopped
- 2 tsp Italian seasoning
- 2 tbsp butter
Instructions
- Prep the ingredients: Slice the mushrooms, chop the garlic, and cube the chicken breast.
- Sauté the mushrooms and garlic: Heat a pan over medium heat with a tablespoon of butter. Sauté the mushrooms until golden, about 5 minutes. Add garlic and sauté for another minute.
- Combine in a slow cooker: Transfer the sautéed mixture to your crock pot. Add the cubed chicken, chicken broth, Italian seasoning, and half of the grated Parmesan cheese.
- Cook on low: Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is fully cooked and tender.
- Stir in cream and remaining cheese: About 30 minutes before serving, stir in the heavy cream and the rest of the Parmesan. Allow it to warm through.
- Taste and season: Adjust seasoning with salt and pepper, then stir in fresh basil just before serving.
- Enjoy: Serve your soup warm with a drizzle of extra olive oil and a sprinkle of Parmesan on top.
Notes
Marinate the chicken overnight for extra flavor. For a thicker soup, mix cornstarch with water and stir in before adding the cream.
