- 2 lbs beef (sirloin or chuck roast)
- 8 oz sliced cremini or button mushrooms
- 1 large yellow onion, chopped
- 3 cloves garlic, minced (or 3/4 tsp dried garlic)
- 4 cups beef broth (low-sodium)
- 1 cup sour cream (or Greek yogurt)
- 2 tsp Worcestershire sauce
- Salt and pepper to taste
- Fresh parsley or thyme for garnish
Instructions
- In a skillet over medium-high heat, sear the beef on all sides until browned.
- In the same skillet, add onions and garlic, sautéing until fragrant. Toss in sliced mushrooms and cook until moisture is released.
- In a crock pot, combine seared beef, sautéed veggies, beef broth, Worcestershire sauce, salt, and pepper. Stir to combine.
- Set the crock pot to low and cook for 6-8 hours, until the beef is tender.
- About 30 minutes before serving, stir in the sour cream and warm without boiling.
- Serve over egg noodles, rice, or mashed potatoes, garnished with parsley.
Notes
For a thicker sauce, add a cornstarch slurry (1 tbsp cornstarch mixed with 2 tbsp water) and cook for an additional 15-20 minutes. Serve with salad or crusty bread for a complete meal.
