Description

A comforting, creamy dish made with tender beef, earthy mushrooms, and a rich sauce, perfect for family gatherings.


Ingredients

  • 2 lbs beef (sirloin or chuck roast)
  • 8 oz sliced cremini or button mushrooms
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced (or 3/4 tsp dried garlic)
  • 4 cups beef broth (low-sodium)
  • 1 cup sour cream (or Greek yogurt)
  • 2 tsp Worcestershire sauce
  • Salt and pepper to taste
  • Fresh parsley or thyme for garnish

Instructions

  1. In a skillet over medium-high heat, sear the beef on all sides until browned.
  2. In the same skillet, add onions and garlic, sautéing until fragrant. Toss in sliced mushrooms and cook until moisture is released.
  3. In a crock pot, combine seared beef, sautéed veggies, beef broth, Worcestershire sauce, salt, and pepper. Stir to combine.
  4. Set the crock pot to low and cook for 6-8 hours, until the beef is tender.
  5. About 30 minutes before serving, stir in the sour cream and warm without boiling.
  6. Serve over egg noodles, rice, or mashed potatoes, garnished with parsley.

Notes

For a thicker sauce, add a cornstarch slurry (1 tbsp cornstarch mixed with 2 tbsp water) and cook for an additional 15-20 minutes. Serve with salad or crusty bread for a complete meal.
