- 2 slices sourdough bread
- 2–3 tablespoons fresh pesto
- 1/2 cup mozzarella cheese, shredded
- 1/2 cup cheddar cheese, shredded
- 1–2 tablespoons unsalted butter
Instructions
- Gather your ingredients.
- Preheat your skillet over medium heat and melt a pat of butter.
- Spread a generous layer of pesto on one slice of bread, top with mozzarella and cheddar, then cover with the second slice of bread. Spread butter on the outside.
- Place the sandwich in the skillet and grill until golden brown (about 3-4 minutes), then flip and grill the other side until crispy and the cheese is melted.
- Slice diagonally and drizzle with olive oil or sprinkle with sea salt before serving.
Notes
For a crunchier exterior, increase the heat slightly while grilling. Avoid overloading on cheese to ensure an easy flip.
